Mormor’s Swedish Pancakes

“My Mormor (mother’s mother) was a strong-willed and very loving Swedish woman (who lived in the US on a Green Card until she passed in 2004). Because of her influence, meals for family get-togethers were always defined by at least a hint of Sweden if not a full-on smörgåsbord. But one of my absolute favorites out of all these treats are Swedish pancakes – a delightfully eggy and savory dish. Note in the recipe below that sugar is nowhere to be found. Trust me on this one, they are delicious because they are not sweet!” -
